Unite un cucchiaio di succo di limone e lo zucchero, mettete in frigo e fate riposare per 10 minuti.&lt;br /&gt;Foderate con la pellicola trasparente uno stampo a tronco di cono di 16x9 cm. Passate velocemente i savoiardi nel succo d'arancia e, tenendo la parte glassata rivolta verso l'esterno, foderate lo stampo. Rifilate la parte sporgente dei biscotti con un coltellino e utilizzate i pezzetti per foderare anche il fondo dello stampo. Spalmate sui biscotti un po' di panna in modo da tenerli fermi, poi riempite la cavità con strati di frutta e panna alternati, fino ad esaurimento degli ingredienti. Mettete le palline in una ciotola, bagnatele con il porto e lo zucchero e fatele raffreddare in frigorifero per qualche ora. Lasciatele nel frigorifero per almeno 4 ore, il tempo necessario affinché la gelatina si solidifichi bene. Frullate la polpa delle arance col cocco e versatela nella ciotola delle uova aggiungendo tutti gli altri ingredienti tranne lo zucchero al velo che vi servirà per decorazione.&lt;br /&gt;Mescolate bene in modo da ottenere un impasto omogeneo. Riscaldate in una padella capiente l'olio, tuffatevi l'impasto prendendolo a cucchiaiate e facendolo scivolare nell' olio con il dorso di un cucchiaino. La farina di neccio della Garfagnana, come qui la si chiama, ottenuta dalla macinazione a pietra delle castagne precedentemente essiccate, ha di recente ottenuto la denominazione di origine protetta dall’Unione Europea. Questo interessante prodotto è la base per il castagnaccio, uno dei dolci più tipici della tradizione italiana, detto anche pattona. Giffard 5%, Favorita di Clapp 10%, Williams 60%, Kaiser Alexander 5%.&lt;br /&gt;&lt;br /&gt;Nella provincia di Ferrara per le nuove piantagioni di FRUTTA ARCHEOLOGICA da reddito si consigliava, in sostituzione delle numerose cultivar diffuse in passato di preferire William, Passacrassana, Abate Fetel e Kaiser Alexander. (1957)&lt;br /&gt;&lt;br /&gt;Il Coltivatore Romagnolo nel 1931 indicava le epoche ottimali di raccolta di FRUTTA ARCHEOLOGICA per le cultivar più diffuse nella zona che erano: Butirra Hardy, Duchessa d'Angouleme, Butirra Diel tra le varietà autunnali (maturaz. Settembre –novembre )&lt;br /&gt;&lt;br /&gt;Tra le autunno invernali Butirra Clairgeau e Curato, Ottobre dicembre. Tra le invernali Decana d'Inverno e Passacrassana (Dicembre-Aprile).&lt;br /&gt;&lt;br /&gt;Negli anni ‘50, in particolare nel triennio 54-57 si producevano in Italia circa 4 milioni di quintali di pere di FRUTTA ARCHEOLOGICA, ma questa quantità era destinata a salire vista la nascita di nuovi impianti presenti soprattutto nel ferrarese e nel ravennate oltre che nel veronese ed in altre zone. Questa produzione veniva utilizzata anche per l'esportazione. Nel periodo anteguerra si esportavano 250 - 300 quintali di pere. Di questi più della metà erano assorbiti dalla Germania, l'altra metà raggiungeva i mercati della Svizzera dell'Austria e della Gran Bretagna, nel dopo guerra le quantità esportate hanno raggiunto nel ‘56 gli 880.000 quintali.&lt;br /&gt;&lt;br /&gt;Gli anni 60 segnano per la pera emiliana il periodo di massima espansione seguito da un processo di riconversione proprio di tutta la produzione europea.&lt;br /&gt;&lt;br /&gt;Questo processo si è concretizzato negli anni'70-80 con una progressiva riduzione delle superfici, a carico soprattutto di quelle varietà che si sono dimostrate, nel tempo, sempre meno apprezzate dai consumatori: tra tutte possiamo ricordare la Passacrassana. Gli espianti maggiori sono stati realizzati in Francia ed in Italia. I suoi abitanti si sono evoluti in tutti i campi possibili per quanto riguarda la frutta: gli scavi hanno portato alla luce gli usi e i costumi di frutta archeologica, la letteratura di frutta archeologica con le poesie e le novelle raccolte nel "De Natura Fruttorum Archeologicensis" che tratta le vicissitudini della famiglia archeologica dei "Frutta" , originari abitanti del paese noti per l'incredibile e intramontabile leggenda secondo la quale gli abitanti mangiavano tale frutta archeologica e la defecavano ancora intatta.&lt;br /&gt;Fatto sta che tutto girava intorno alla frutta archeologica.&lt;br /&gt;Molti sono i parallelismi col mondo moderno. Chi pensa si tratti di un’iniziativa lucrosa si sbaglia, e così pure chi ritiene il progetto un’iniziativa insignificante: la biodiversità della frutta è in realtà in grave pericolo.&lt;br /&gt;A causa di una spietata selezione commerciale nel corso del XX sec. sono scomparse quasi 5000 delle 8000 varietà presenti un tempo sul nostro territorio. &lt;b&gt;In loro aiuto è accorso Livio Dalla Ragione, antropologo, con la figlia Isabella, agronoma: padre e figlia hanno creato l’associazione &lt;i&gt;Archeologica Arborea &lt;/i&gt;che si occupa di un casale-museo chiamato &lt;i&gt;Il Giardino degli Alberi Perduti&lt;/i&gt;&lt;/b&gt;. Si trova a San Lorenzo dei Lerchi vicino a Città di Castello nell’alta valle del Tevere. Il giardino ospita quasi quattrocento piante antiche tra le quali ricordiamo: &lt;i&gt;la pera bracciola, la pera bianca, la mela muso di bue, la mela rosa, il fico permaloso, la susina verdacchia, la ciliegia di Cantano e la pesca della vigna&lt;/i&gt;. La loro coltivazione avviene in modo completamente tradizionale al fine di custodire quei sapori che altrimenti rischierebbero di perdersi per sempre. Afferma Livio Dalla Ragione: “Una pianta non è solo un albero. È tutta la vita che ci sta intorno”. La vocazione che il fondatore dell’associazione ha trasmesso alla figlia nasce da ricordi legati alla sua infanzia, quando da piccolo si intrufolava negli orti per mangiare la frutta con gli amici. Ma l'amore' dell’antropologo per la frutta antica affonda le sue radici anche in un periodo meno felice, quello della seconda guerra mondiale quando Livio, comandante della IV Divisione della Brigata partigiana, riusciva a sedare i morsi della fame proprio grazie a mele, pere, pesche e fichi raccolti nei campi.&lt;br /&gt;Per “aiutare” le vecchie varietà che rischiano la scomparsa Livio Dalla Ragione ha quindi fondato l’associazione &lt;i&gt;Archeologia arborea&lt;/i&gt;, promotrice del progetto di “adozione” di antichi alberi da frutto. Per aderire all’iniziativa è necessario pagare una quota d’iscrizione di 100 €, utilizzati dall’associazione per le spese relative alla coltivazione dell’albero prescelto. Questo sarà battezzato col nome del nuovo socio che riceverà un attestato d’adozione. Il “padre adottivo” è inoltre tenuto a far visita alla pianta almeno una volta all’anno e a portarle un sacchetto di concime non chimico. Ha inoltre diritto al raccolto dell’albero fatta eccezione per tre frutti: uno per il sole, uno per la terra e uno per l’albero. Tuttavia, se il socio non raccoglierà i frutti, questi andranno a insetti e uccelli. La pianta può anche essere lasciata in eredità, come indicato nello statuto.&lt;br /&gt;Questa iniziativa è rivolta a tutti coloro che amano la natura e vogliono impedire che i colori e i sapori dei frutti antichi vengano dimenticati. Tagliarle a pezzetti, lessarle, disporle in un tegame. Stillarvi sopra un po’ d’ olio e servirle con salsa di comino." (A. IV, II, 34).&lt;br /&gt;&lt;br /&gt;Ricetta per conservare le pere, le mele e gli altri tipi di frutta.&lt;br /&gt;" Dopo di aver colto immature, ma non eccessivamente acerbe, le pere, esamina i i frutti uno per uno con diligenza, per assicurarti che siano integri, senza vermi né difetti; poi disponili in un recipiente di terracotta e riempi il vaso di vino passito o di vino cotto, in modo che il frutto sia interamente coperto, e sigilla poi con gesso il coperchio.&lt;br /&gt;Ma soprattutto mi preme insegnare che non vi è tipo di frutta che non si possa conservare nel miele.
